How to Cook Sushi Rice

The best way to cook sushi rice is by using a rice cooker. Most modern rice cookers have sushi rice cooking settings which make it easier.

What you need:
- 2 cups of uncooked sushi rice or the best substitute
- Dashi stock (cooled off)
- ¼ cup of Rice vinegar
- And salt
- Wash the rice thoroughly under running water. This is to remove excess dust and starch. Do this at least twice.
- Drain the rice using a colander and leave it for about 30 minutes
- Place the rice on to the rice cooker inner pot and add water. Let it soak for 30 minutes to an hour depending on the age of the rice you got. The older the rice, the longer soaking it needs.
- After the soaking time, rinse off water and pour the cooled dashi stock as per the rice to water ratio.
- Place the inner pot into the rice cooker and turn it on with the correct cooking setting.
- When the rice is cooked, place the rice inside a wooden hangiri or any large bowl that can absorb excess moisture
- Add the ¼ cup rice vinegar into the rice and mix it carefully using a rice spatula
- Fan the rice while mixing it with vinegar for proper absorption. Remember the key in making great sushi rice is on the process.
- Serve it warm or prepare the other sushi ingredients.
